Greek Chicken Marinade


Rinse and pat dry, organic chicken thighs (bone in and skin on) and place in a large bowl. Whisk together olive oil, lemon juice, freshly grated garlic, fresh or dried oregano & thyme, salt, pepper, and paprika in a small separate bowl. Pour 2/3 of the marinade on top of the chicken thighs. Use your hands (like a real Greek) to toss the chicken until it is well coated. Let it sit in the refrigerator for 20 minutes to absorb the flavor before baking. After 20 minutes, remove the chicken and place on a parchment paper lined baking sheet or baking pan. pour the remaining marinade on top of the thighs. Bake at 400 degrees 30-45 minutes, depending on size and thickness of thighs.
